Santorini is the postcard made real — blue domes, whitewashed terraces stepping down a cliff, and a sunset in Oia that people quite literally plan entire trips around. But stay a few days and the island becomes more than its most famous view: a caldera to sail, wines grown in volcanic ash, and villages where the crowds never reach.

Out on the water

A catamaran cruise is the island’s best half-day: swim the warm springs by the volcano, snorkel the red and white beaches, and toast the sunset from the deck with the cliffs rising gold behind you. It’s the angle you can’t get from land.

Wine, villages and quiet corners

Inland, the island grows Assyrtiko in baskets of volcanic soil — cliffside wineries pour it with a view to match. Wander to Pyrgos or Megalochori for the Santorini that still feels lived-in, all narrow lanes and blue shutters, and skip the midday crush in Fira.
